Preparing Authentic Apple Crumb Cake recipe

Preparation of the dough for authentic Apple Crumb Cake:

Mix flour, yeast, salt and sugar. Add melted butter, lukewarm milk and eggs to dough and work it with the hooks of your electric hand mixer. Continue working dough until smooth. Cover the dough and keep it  in a warm place (warm room temperature or a dry place outside if you have the A/C on) for about an hour.

After an hour use a baking sheet (I use size 11″ x 17″) and line the bottom with baking paper. Roll the dough evenly on the sheet and let it rise a second time while you prepare the apples or cherries and the crumble-Streusel.

Preparation of  the apple or cherry topping:

Cut the apples in quarters, peel and core them. Dice the apples in small pieces or place the cherries in a colander to drain.

Preparation of the crumbles:

Add the flour, vanilla flavor, sugar, and butter in a bowl and mix well with using your hands.  Once all the ingredients have been properly combined, rub the mixture between your fingers to create the crumbles.

Finishing of authentic apple crumb cake or cherry crumb cake:

Spread the apples or cherries evenly on the dough. Next, add the streusel – crumbles on top of the apples or cherries.

Love both! Prefer the Sauerkirschen! Yummy!

abgirl3, I love both too. sometimes I make both toppings on one sheet. Half of it with apples, and the other half with cherries. It works fine.

This sounds very much like my mom’s apfel Schmitt! Slice apples overlapping slightly in rows

That’s exactly how my mom made it. She also made it with plums. Very good!

Nora, I am waiting for the plums coming into the stores. I usually made the first plum cake for my oldest sons Birthday, which is this Sunday. So far, I have not seen the plums yet.

Thank you for this recipe. My late father came to England as a POW and I remember as a child the wonderful smell of the yeast apple cake cooking. Ive been looking for a recipe that sounds like the cake my father made and I think at long last I have found it. I am baking it now, with very fond memories.

Elizabeth Knight, thank you for your nice message. You could also use this dough, to cut apples in slices and set them in lines on top of the cake and no crumbs. It is a basic yeast dough that can be used with rhubarb, plums, or your favorite fruit. A picture is always appreciated. Yours, Oma

This looks close to how my mom and my grandma made apfel kuchen and pflaum kuchen. They did apple slices in lines, and to make the streusel, add a dollop of the yeast dough and cut it in with the other ingredients. Makes a unique streusel topping. They also made kuchen using blueberries or with only streusel. We always had vanilla sugar on hand. My mom put a vanilla bean in a jar of sugar. My grandparents and mom were born in Germany.

Inge, thank you for your very nice comment. The way you describe how to make vanilla sugar is the way to go, to make your own vanilla sugar. I used to make it the same way.
