5 Delicious Pudding Recipes

5 Delicious Pudding Recipes

5 Delicious Pudding Recipes made from scratch. Vanilla, chocolate, strawberry, raspberry, and cherry. Easy to prepare using a basis of milk, sugar, corn starch and a flavor.

Ingredients for 5 Delicious Pudding Recipes:

Vanilla Pudding:

  • 600 ml (1.26 pt) of milk
  • 4 tablespoons of corn starch OR food starch of your choice
  • 4 tablespoons of sugar
  • 2 egg yolks
  • 1 vanilla bean
  • 1 pinch of salt

Chocolate Pudding:

  • 600 ml (1.26 pt) of milk
  • ½ of a chocolate bar (50 g – 1.76 oz), milk chocolate, OR bittersweet chocolate OR white chocolate
  • 1 tablespoon of cocoa
  • 4 tablespoons of sugar
  • 4 tablespoons of corn starch OR food starch of your choice
  • 2 egg yolks

Preparation of Vanilla Pudding:

Separate the eggs using an egg divider. Whisk the egg yolks and cornstarch together with 150 ml of milk and set aside.

Cut the vanilla bean lengthwise in half and scrape the seeds out. Add the bean, seeds, sugar, and salt into a saucepan with the rest of the milk and heat up  until it starts to boil. Pull the saucepan from the stove and remove the vanilla bean.

Slowly add the egg/starch mixture to the heated milk using a whisk. Bring the saucepan back to the heat and cook for about 2-3 minutes or until the pudding thickens while stirring.

Remove from the stove and pour the pudding into a ceramic or glass bowl. Rinse cellophane wrap under water and cover the pudding with it to avoid the building of a skin on top. Chill the pudding in the refrigerator.

Preparation of Chocolate Pudding:

Separate the eggs using an egg divider. Sift the cocoa. Whisk the egg yolks, sifted cocoa, and cornstarch together with 150 ml of milk and set aside.

Heat up the rest of the milk in a saucepan adding the sugar. Add the chocolate and stir using a whisk until the chocolate melts. When the milk starts boiling pull the saucepan off the stove and slowly add the cocoa/egg/starch mixture to the heated milk using a whisk. Bring the saucepan back to the heat and cook for about 2-3 minutes or until the pudding thickens while stirring.

Remove from the stove and pour the pudding into a ceramic or glass bowl. Rinse cellophane wrap under water and cover the pudding with it to avoid the building of a skin on top. Chill the pudding in the refrigerator.

To refine the vanilla or chocolate pudding, beat the egg whites using an electric handheld mixer until stiff. Mix it into the warm pudding.

Preparation of Vanilla and Chocolate Pudding

Fruit Puddings:

  • 600 g (1.32 lb) of strawberries makes about 300 ml (10.14 oz) of juice
  • OR 600 g (1.32 lb) of raspberries makes about 400 ml (13.52 oz) of juice
  • OR 700 g (1.54 lb) of cherries, sweet or sour makes about 300 ml (10.14 oz) of juice
  • 200-300 ml (6.76-10.14 oz) of milk, depending on the amount of juice to add to 600 ml (1.26 pt) of liquids
  • 2 tablespoons + 5 tablespoons of sugar
  • 2-3 tablespoons of water
  • 4 tablespoons of corn starch OR food starch of your choice
  • 1 pouch of vanilla sugar OR 1 teaspoon of vanilla extract
  • 125-150 ml (4.22-5.07 oz) of whipping cream

Preparation of the Fruit Puddings:

Wash the berries or cherries. Remove the pit of the cherries using a cherry pitter. Place the fruit in a saucepan, add 2 tablespoons of water and 2 tablespoons of sugar. Bring slowly to a boil, cover the saucepan and let it cook for 2-3 minutes. Remove from stove and pass through a sieve fine-meshed.

Mix the cornstarch with 5 tablespoons of milk until dissolved. Place aside. Fill up the passed fruit with milk to 600 ml (1.26 pt). Add the vanilla sugar and 5 tablespoons of sugar to the liquids and mix. Bring the fruit/milk mix to a boil and add the dissolve cornstarch while continually stirring, until the pudding thickens.

Rinse cellophane wrap under water and cover the pudding with it to avoid the building of a skin on top. Let it cool down to room temperature.

Beat the whipping cream until stiff. Add the cream to the pudding and mix until it is combined. Chill the pudding in the refrigerator.
