Apple Pockets Recipe
The Apple Pockets recipe is easy to prepare with yeast dough and makes about 10 — 12 pockets depending on the size of the cut circles. Apple Pockets are called Apfeltaschen in Germany.
Ingredients for Apple Pockets recipe:
- 500 g (17.63 oz) of all purpose flour
- 75 g (2.64 oz) of sugar
- 1 package of dry yeast rapid rise
- 1 egg size XL
- 100 g (3.52 oz) of butter
- 250 ml (8.45 oz) of milk
- 1 pinch of salt
- peel of 1/2 of a lemon
- 250 g (8.81 oz) of apple sauce for filling
- some evaporated canned milk for brushing the pockets
- some white sprinkle sugar for topping
Preparation of Apple Pockets:
Use a fine sieve to drain the apple sauce to get some of the liquids out and set aside. Sift flour into a bowl. Add sugar, yeast, a pinch of salt, and lemon peel and mix together with a big spoon. Make a hole in the center, place the egg in the hole and cover with the flour mix. Warm up the milk and pour it over the flour. Melt the butter in the microwave and add to the dough. Knead the ingredients together with a handheld mixer using the kneading hooks. Make sure to knead thoroughly until the dough shows bubbles and loosens easily from the surface of the bowl. Cover the dough with a towel and let it rise for about an hour, or until it has doubled in size.
When ready, knead the dough again with your hands and roll it with a rolling pin until about 5 mm — ¼ in thick. Cut circles using the back of a pastry pocket pie crimper (I used one about 15 cm – 6 inches in diameter). Use about 1 ½ tablespoons (depending on the size of the circles) of drained applesauce and place it in the center of the dough circle.
Fold the circle in half and press the edges together with your fingers. To make sure the pockets are sealed, you can also brush some egg white on the edges before pressing them together. Brush the pockets on the top with condensed milk and sprinkle with sugar. Place the pockets on a paper covered baking sheet.
Preheat the oven to 175°C – 350° F, place the sheet on the middle rack and bake for about 25 minutes. Let cool before serving. These Apple Pockets can easily be frozen.
