Easy Blueberry Cake Recipe

Easy Blueberry Cake – Heidelbeerkuchen mit Sahne

This Easy Blueberry Cake is called einfacher Heidelbeerkuchen in Germany. Whipped cream is called Schlagsahne.

Ingredients for Easy Blueberry Cake:

  • 150 g (5.29 oz) of soft butter OR margarine
  • 150 g (5.29 oz) of sugar
  • 300 g (10.58 oz) of all purpose flour
  • 3 eggs, XL
  • grated lemon peel of 1 lemon
  • ½ teaspoon of lemon extract (optional)
  • 1 pouch of vanilla sugar OR 1 teaspoon of vanilla extract
  • 1 pinch of salt
  • 3 teaspoons of baking powder
  • 600 g (21.16 oz) of blueberries
  • 473 ml (1 pint) of heavy whipping cream
  • 2 pouches of “Whip it” whipping cream stabilizer

Preparation:

Place the blueberries in a colander and wash under running water. Spread them on a paper kitchen towel to dry. Place about 25 blueberries on a small plate and put them aside for decoration.

Use an electric hand mixer to mix soft butter with sugar, salt and vanilla flavoring. Add one egg at a time to the batter. Then, add lemon extract and grated lemon peel. In a separate container, add baking powder to the flour. Mix it and then sift it over the batter. Stir it until the batter is smooth.

Add the washed and tried blueberries to the batter and carefully stir with a silicon spatula from the outside to the center until all blueberries are covered with the batter.

Grease a spring form pan (11 inches in diameter). You also could use a bundt cake spring form or a loaf form. Spread the batter evenly in the baking pan using the back of a spoon.

Preheat your oven by 180°C (360°F) and bake for about 35 minutes on the middle rack. When the time is up, take the cake out and immediately open the spring form. Place the cake on a cooling rack.

When the blueberry cake has cooled down you can either sprinkle some powdered sugar on top of the cake or you can decorate the top with whipping cream.

Mix the whipping cream with “Whip it” and beat until stiff. With a spatula spread the whipped cream on the sides and on the top of the cake. With the help of a cake lifter place the cake on your serving plate. Use either a knife to mark the slices on top or a cake divider (14 or 16 slices). Decorate the top with some blueberries to your liking.
