Original Macaroons Recipe – Kokosmakronen
This Original Macaroons Recipe is easy to prepare. Macaroons are called Kokosmakronen in Germany.
Ingredients for Original Macaroons Recipe:
- 4 egg whites, XL
- 1 teaspoon of cinnamon
- 1 teaspoon of almond extract
- 200 g (7 oz) of sugar
- 250 g (9 oz) of coconut flakes, unsweetened
- 1 box of round baking waffles (Backoblaten) 4 cm (to find them click here)
- 85 g (3 oz) of dark chocolate 70% cacao (optional)
Preparation of the Macaroons:
Use your electric hand mixer to beat the egg whites until they are stiff. Add the cinnamon and almond extract. Sift the sugar and slowly add it to the egg whites. Beat the ingredients until the sugar is dissolved. Use your whisk or spatula to fold in the coconut flakes. Do not stir.
Cover a baking sheet with baking paper. Place the baking waffles on top of the paper but leave some space between them. Use two teaspoons to place the mixture onto the waffles. The mix also can be set onto the baking sheet without the waffles.
Preheat the oven to 150°C (300°F) and place the macaroons on the fourth rack from the bottom. Bake the macaroons for about 20-22 minutes. Let them cool down on the baking sheet before placing on a cooling rack.
For the macaroons without waffles melt the chocolate in a bain-marie (water bath) and brush the bottom of the cookies. Make sure that they have had time to thoroughly dry on the outside (so that they won’t stick to each other) before storing them in a tin box.
