- 120 g (4.23 oz) of powdered OR confectioners sugar
- 2 tablespoon of Cognac OR Brandy
- 1 pinch of salt
- 360 g (12.69 oz) of flour, all purpose
- 30 g (1.05 oz) of cocoa, unsweetened
- 3-4 tablespoons of almonds, blanched and chopped (for topping)
Preparation:
To prepare the Cognac Cookies Recipe, beat the butter using a handheld electric mixer. Slowly add sugar and salt and mix until creamy. Add Cognac or Brandy and beat until smooth.
Mix flour and cocoa and sift over the butter/sugar mix. Knead the ingredients with your hands, until you have a smooth dough. If the dough is too dry, add carefully more Cognac/Brandy.
Fill the dough in a decoration bag and attach a tip with a hole 1,2-1,5 cm (0.5-0.6 in) in diameter. Press rolls about 13-15cm (5-6 in) or form the rolls with your hands. Close the rolls to a ring and connect both ends. Place the rings on a baking sheet covered with baking paper. Spread chopped almonds on top of each ring and slightly press the almonds into the dough.
Preheat the oven to 175-190°C (350-375°F) and bake the Cognac Cookies on the middle rack for 10-12 minutes. Let the Cognac rings completely cool out on the baking sheet before placing them on a plate. Sprinkle some powdered sugar on top.
