Creamed Spinach Recipe
A traditional meal on Good Friday is spinach, potatoes and eggs. It is easy to follow this Creamed Spinach Recipe. The meal is called Spinat, Kartoffeln, und Eier in Germany. You can serve the spinach with scrambled eggs (if you have many people for the meal) or with eggs sunny side up.
Ingredients for Creamed Spinach Recipe:
- 900 g (32 oz) of fresh spinach OR frozen spinach
- 3 tablespoons of all-purpose flour
- 200 g (7.05 oz) of diced onions
- 2 tablespoons of sour cream
- 1 ½ cups of water
- 2 tablespoons of shortening
- salt
- pepper
- Maggi
Preparation of Creamed Spinach Recipe:
If you use fresh spinach, you need to wash it at least twice because there might be a lot of sand in it. Separate the leaves from the stems and cook them in saltwater for about 6-8 minutes.
Once cooked, remove approximately 1 ½ cups of the water before you place the spinach leaves in a colander to drain them. Use a food mill or a meat grinder to puree the spinach.
Melt the shortening in a saucepan.. Add the onions and saute them until they are transparent. Add the flour and the water and stir until smooth. If there are some lumps in your roux, just pass it through a sieve and the problem is solved. Add the spinach to your roux. Mix in the sour cream and season it with some salt, pepper to taste, and Maggi Seasoning (which you can get in the deli section of your grocery store or in the section where you find the gravy). Heat it up to a boil, while continuously stirring.
Preparation of Potatoes:
Wash and peel your potatoes. Cut them in quarters. Put them in a pot of salted water. (Water should just cover the potatoes). Bring to a boil and let them cook for about 18-20 minutes. Drain them in a colander and place in a serving dish.
Ingredients for Scrambled Eggs:
- 10-12 eggs
- ¼ cup of sparkling water
- pinch of salt
- 1 tablespoon of butter
Preparation of Scrambled Eggs:
Whisk the eggs with the sparkling water and a touch of salt. Heat up the butter evenly in a pan and add the egg mixture. Stir from time to time, until the eggs are fully cooked. Remove from hot pan and place in a serving bowl, so they won’t overcook.
