- 4–5 cloves of garlic
- 2 red peppers
- 150 g (5 oz) of bacon
- 4–5 teaspoons of salt
- 1 teaspoon of paprika
- 3 tablespoons of sugar
- 750 ml (25 oz) of water
- 3 tablespoons of crème fraîche OR sour cream
- 236 ml (8 oz) of heavy cream
- 8–10 stems of parsley
Preparation of the soup:
Wash the tomatoes and cut them into quarters. Chop onions, garlic, and red pepper in bigger pieces. Cut the bacon into small strips and fry it in a big pan until all the fat has melted. Add onions and garlic to it and fry until the onions become transparent. Combine tomatoes with red pepper and add them to the onions. Mix all the ingredients in your pan thoroughly.
Pour the water over the tomatoes and add salt, paprika, and sugar. Cover the pan and let it simmer for about 45 minutes on medium heat. Remove the pan from your stove top and press the tomato mixture through a sieve or use a food mill. Pour the mixture back into the saucepan and bring it to a boil.
Add crème fraîche or sour cream and chopped parsley. Reduce the heat and let the soup simmer for 10 more minutes.
Beat the heavy cream until stiff. Pour the Tomato Soup in a bowl. Serve the soup in a soup plate, add a little of the whipped cream on top and offer Oma’s Homemade Baguette.
