Homemade ice cream Fürst Pückler

Homemade ice cream Fürst Pückler – Neapolitan ice cream

The homemade ice cream Fürst Pückler also is known as Neapolitan ice cream. Vanilla, strawberry, and chocolate ice cream in layers. I prepared the recipe without an ice cream maker.

Ingredients for vanilla ice cream for homemade ice cream Fürst Pückler:

  • 500 ml (1.05 pt) of whole milk OR half & half
  • 500 ml (1.05 pt) of heavy whipping cream
  • 1 vanilla bean OR 2 teaspoons of vanilla extract
  • 8 egg yolks
  • 250 g (8.81 oz) of sugar

Preparation of vanilla ice cream:

Add the milk, whipping cream, and 1/2 cup of the sugar in a saucepan and bring to a boil. Cut the vanilla bean lengthwise and scrape the mark out using the back of a small knife. Add the seeds and the bean to the milk mixture and bring it slowly to a boil. Remove from the stove and let it cool down. Stir from time to time.

Separate the egg yolks from the egg whites and add the rest of the sugar. Beat egg yolks and sugar until creamy. Take the vanilla bean out of the milk mixture and add the mixture slowly to the eggs while continuously beating. Place the vanilla ice cream mixture in a bain-marie (double boiler) and heat it for 12-15 minutes. Do not boil. The mixture will thicken.

Prepare a large bowl with water and ice cubes. Pass the custard through a fine sieve into a bowl and place it into the bowl with the ice water. Stir the ingredients, until they are cold. Spread the ice cream in a flat container and freeze it for 2 hours. Take the half-frozen ice cream out of the freezer and place it in a stand mixer. Beat the ice cream for about 15-20 minutes. Pour the ice cream in a freezer container and let it harden overnight.

Ingredients for chocolate ice cream:

  • 500 ml (1.05 pt) of whole milk OR half & half
  • 500 ml (1.05 pt) of heavy whipping cream
  • 6 egg yolks
  • 250 g (8.81 oz) of sugar
  • 300 g (10.58 oz) of dark chocolate (minimum of 54% cacao)
  • 2 teaspoons of vanilla extract (optional)

Preparation of chocolate ice cream:

Add the milk, whipping cream, chopped chocolate, and 1/2 cup of the sugar in a saucepan and bring to a boil while constantly stirring. Remove from the stove and let it cool down. Stir from time to time.

Continue as described in the vanilla ice cream.

Ingredients for strawberry ice cream:

  • 900 g (1.98 lb) of strawberries
  • 400 g (14.10 oz) of sugar
  • 500 ml (1.05 pt) of whole milk or half & half
  • 500 ml (1.05 pt) of whipping cream
  • 3 tablespoons of lemon juice

Preparation of strawberry ice cream:

Wash the strawberries and dry them with a paper kitchen towel. Take the core out, cut in slices, and place in a plastic freezer bag. Freeze for two hours.

Mix the frozen strawberries in a blender adding the lemon juice, sugar and milk/half & half. Beat the whipping cream until stiff. Pour the strawberry mixture in a bowl and add the whipped cream. Mix the ingredients using a spatula.

Freeze as described in vanilla ice cream. Make sure to stir the strawberry ice cream from time to time during the freezing process, to avoid the build-up of ice crystals.

Finishing of the homemade ice cream Fürst Pückler:

After the ice cream is frozen, it is ready to serve. There are two options to create the combination of the homemade ice cream Fürst Pückler. Scoop of each ice cream a ball onto a plate and decorate with whipped cream and or fruit. That is the easy way.

Homemade Ice Cream Fürst Pückler

To make the original shape in a loaf pan of the Fürst Pückler ice cream, use of each of the ice creams 400 g (14.1 oz) and mix it in the blender.

Spread it in a loaf pan starting with the vanilla ice cream, chocolate ice cream, and on top the strawberry ice cream. Freeze it again until it hardens. My loaf pan has the measurements 21 x 11 x 7 cm (8.26 x 4.33 x 2.75 in).
