Beef Stroganoff Recipe
Beef Stroganoff recipe is called Boeuf Stroganoff Rezept in Germany.
Ingredients for Beef Stroganoff recipe:
- 800 g (1.76 pounds) strips of beef loin stir fry OR beef top sirloin OR beef filet
- 4 (350 g–12.34 oz) of diced tomatoes
- 250 g (8.81 oz) of sliced mushrooms
- 3 – 4 (100 g–3.52 oz) of diced pickles
- 2 (250 g–8.81 oz) of diced onions
- 300 g (10.58 oz) of sour cream
- 3 tablespoons of sunflower oil OR butter
- 1–2 tablespoons of brandy (optional)
- 2 teaspoons of mustard
- 4 tablespoons of white-wine vinegar
- salt
- pepper
Preparation:
If you purchased one large piece of your meat, rinse it, dry with a paper kitchen towel, and cut it in slices and then strips. Wash the mushrooms and cut the stems even with the bottom of the cap. Mix vinegar with 500 ml (16.9 oz) of cold water. Add in the mushrooms and let them soak for about 30 minutes. Take them out, dry them with a paper kitchen towel and cut the mushrooms in slices.
Boil some water in a pan. Place the tomatoes in a bowl and pour the boiling water over them. (This will help to peel the tomatoes). After a minute, remove the tomatoes from the water with kitchen tongs. Dice the tomatoes along with the onions and pickles.
Heat up the oil in a large skillet. Fry the meat evenly on all sides and use kitchen tongs to place the strips on a plate. (The meat should not have any charring). Add the onions to the skillet and sauté. Once the onions become transparent, add the sliced mushrooms while stirring with a wooden spoon. Add in the diced tomatoes. When the mixture becomes juicy, add in the pickles and sour cream. Place the meat back into the mixture and let it cook for about 8–10 minutes. Season the Beef Stroganoff with the Brandy (optional), mustard, salt, and pepper.
If you would like to thicken your Beef Stroganoff sauce, add in ½–1 tablespoon of corn starch that has been dissolved in 3 tablespoons of water. Stir thoroughly while adding it into the sauce.
